Ingredients

Ingredients

  • Sliced Pork – thinly sliced pork shoulder, aka butt, used for shabu shabu. Can also use shaved pork found at most local grocery stores.
  • Onion – thinly sliced yellow or brown onion.
  • Neutral Oil no taste or flavor with high cooking temperature. Some choices are sunflower oil, peanut oil, sallower oil, vegetable oil, and canola oil.
  • Butter – salted or unsalted, used to give a creaminess to the stir fry sauce.
  • Ponzu – a citrus flavored soy sauce found in most Japanese supermarkets, Mizkan brand preferred. Used as the base savory and zesty flavor of the sauce.
  • Toasted Sesame Oil – 100% Toasted Sesame Oil that should have a dark brown color. Used to provide a touch of nuttiness to the sauce.
  • Sweetener –  use your preferred sweetener.
  • Green Onion – finely chopped green onion scallions, optional garnish.

🥓 Pork Note

For pork stir fry recipes, Thinly Sliced Pork Butt or Shoulder is the ideal choice. These cuts offer the right balance of fat and meat, making the stir fry juicy and flavorful. You can easily find these cuts at most Asian supermarkets labeled ‘shabu shabu’. You also can use Shaved Pork as an suitable alternative.

Frequently Asked Questions

Can I use other cuts of pork besides shoulder?

While pork shoulder is ideal for its tenderness and flavor paired with the sauce, you can also use thinly sliced pork belly or shaved pork instead.

Can I make this recipe ahead of time?

This stir fry is best enjoyed fresh, but you can prepare the ingredients ahead of time. Slice the onions and prepare the sauce in advance and store them separately in the refrigerator until ready to cook.

What's the best way to slice pork shoulder thinly?

I recommend just buying pre-sliced pork for this recipe. If not, you can achieve thin slices by partially freezing the pork shoulder for about 30 minutes and cutting against the grain. This helps firm up the meat, making it easier to slice thinly.

Storage Tips

To store leftovers, transfer them into an airtight container. Refrigerate promptly to maintain freshness for up to 5-7 days.
