  • Sliced Pork – thinly sliced pork shoulder, aka butt, used for shabu shabu. Can also use shaved pork.
  • Neutral Oil no taste or flavor with high cooking temperature. Some choices are sunflower oil, peanut oil, sallower oil, vegetable oil, and canola oil. 
  • Ginger – fresh loosely chopped ginger. Can peel or leave it unpeeled depending on preference. Main flavor found in the shogayaki sauce.
  • Onion – loosely chopped yellow or brown onion. Used for the shogayaki sauce.
  • Garlic– fresh garlic.
  • Sweetener –  use your preferred sweetener.
  • Soy Sauce – low-sodium Soy Sauce preferred. Can also use tamari for gluten-free.
  • Japanese Sake – typically will come in a large bottle labeled junmai sake. Can also substitute with dry sherry wine or Chinese cooking wine, found at local grocery stores or Asian markets. Helps provide the base of the sauce and mellow out the flavors.
  • Toasted Sesame Oil – 100% Toasted Sesame Oil that should have a dark brown color. Used to provide a touch of nuttiness to the sauce.
  • Green Onion – finely chopped green onion scallions, optional garnish.
  • Toasted Sesame Seeds – optional garnish.

Additional Add Ins

For an added depth of flavor and heartiness, consider incorporating Sliced Onions into stir fry. They blend seamlessly with the savory pork and ginger sauce.

🥓 Pork Note

For pork stir fry recipes, Thinly Sliced Pork Butt or Shoulder is the ideal choice. These cuts offer the right balance of fat and meat, making the stir fry juicy and flavorful. You can easily find these cuts at most Asian supermarkets labeled ‘shabu shabu’. You also can use Shaved Pork as a suitable alternative.

Prepare your ingredients in advance for efficient stir-frying, and use a spacious Wok or Deep Skillet to maintain high heat and evenly cook your stir-fry.

Step 1 In a food processor, combine loosely chopped ginger and onions, along with garlic, sweetener, Japanese sake, soy sauce and toasted sesame oil and grind until well combined.

For optimal flavor of the sauce, I recommend preparing this sauce in advance and refrigerating it. Allowing the sauce to Rest in the Fridge will enhance its flavors.

Step 2 Bring a wok or large skillet up to heat, coated with oil. Add thinly sliced pork and cook for 2-3 minutes until the pork is golden brown.

Instructions

  • Gather all the ingredients.

  • Pour in the sauce, stir well to coat, and cook for another 30-45 seconds. Then, plate the stir-fry along with excess sauce and garnish with toasted sesames and green onions before serving.
