  • GarlicĀ – freshly sliced garlic.
  • SaltĀ – sea salt preferred.
  • Black PepperĀ – ground.
  • Neutral OilĀ no taste or flavor with high cooking temperature. Some choices are sunflower oil, peanut oil, sallower oil, vegetable oil, and canola oil.Ā 
  • Butter – salted or unsalted will both work. Used to provide creaminess to the itameru sauce.
  • Soy Sauce – low-sodium Soy Sauce preferred. Can also use tamari for gluten-free. Base flavor for the itameru sauce.
  • Japanese Sake – typically will come in a large bottle labeled junmai sake. Can also substitute with dry sherry wine or Chinese cooking wine, found at local grocery stores or Asian markets. Helps mellow out the sauce and meld the flavors together.
  • SweetenerĀ – use your preferred sweetener.
