Use a Large Skillet with a Flat Bottom. This allows for quicker reduction times during the reduction process, as the larger surface area facilitates faster evaporation of liquids.

Step 1 Start by adding heavy cream, sweetener and butter in a large skillet and bringing the mixture to a slight boil. Once boiling, set to low heat and simmer for 15-20 minutes until thickened. Occasionally lightly stir with a spatula.

Step 2 Pour the truffle mixture into a bowl and swift in cocoa powder. Transfer the chocolate truffle to a molding dish of your choice and place it in the refrigerator for 1-2 hours until hardened.

  • 1/3 Cup Cocoa Powder

Instructions

  • Gather all the ingredients.

  • Using a large frying pan, add heavy whipping cream, sweetener and butter on medium and heat to a slight boil. Once boiling, simmer for 15-20 minutes or more until thickened. Note - using a large frying pan will shorten this process rather than using a sauce pan.

  • Next, remove the mixture from heat and pour into a mixing bowl. Sift cocoa powder on top of the mixture and combine with a whisk.

  • Line your molding dish with saran/plastic wrap, sprinkle cocoa powder on the bottom, and pour the mixture into the dish. Refrigerate for 1-2 hours.

  • When hardened, dust cocoa powder on top, cut into squares and serve.
