  • Miso – awase brown Miso works best.
  • Japanese Sake – typically will come in a large bottle labeled junmai sake. Can also substitute with dry sherry wine or Chinese cooking wine, found at local grocery stores or Asian markets. 
  • Sweetener – use your preferred sweetener.
  • Rice VinegarRice Vinegar distilled from rice used in Asian cuisine. Can sub with distilled white vinegar.
  • Vegetable Oil – oil with no taste made from soybeans, corn, canola and/or sunflower.
  • Ginger– freshly grated ginger.
  • Garlic– freshly grated garlic.
  • Cayenne Pepper ground Cayenne Pepper.
  • Toasted Sesame Seeds – optional garnish.

🥢 Miso Note

There are three types of miso: White Miso is mild with sweet, nutty, and savory flavors. Red Miso offers a more robust and salty taste, while Brown Miso, also known as Awase Miso, in a blend between the 2 and strikes a balance between salty, sweet, and umami flavors. I recommend Awase Miso for a well-balanced taste, but the choice depends on personal preference.

Step 1 In a bowl, microwave Japanese sake and sweetener for 30-45 seconds.

Step 2 Combine the boiled Japanese sake with sweetener, water , rice vinegar, vegetable oil, grated ginger, grated garlic, cayenne pepper, and optional toasted sesame seeds.

To make this recipe easier, Warm the Japanese Sake in the Microwave with the sweetener and then combine all the ingredients in a food processor and blend.
