  • Enoki Mushroom – 1 pack of enoki mushrooms found at Asian grocery stores. Usually comes packed in plastic in a 7oz size.
  • Garlic– freshly grated garlic.
  • White Wine – dry white wine, not sweet. Chardonnay or Pinot Grigio are some options.
  • Chicken Broth – standard chicken broth. I recommend full flavor, not reduced sodium.
  • Butter – salted or unsalted. If using unsalted, just add a sprinkle of salt.
  • Soy Sauce – low-sodium Soy Sauce preferred. Can also use tamari for gluten-free.
  • Black Pepper – ground.
  • Lemon – optional fresh lemon juice.
  • Spicy Pepper Flakes – optional to add red pepper flakes.

Don’t forget to add a Pinch of Salt to the water before boiling the spaghetti. Use a Large Pot to boil the spaghetti, giving it plenty of room to cook evenly.

Ensure the spaghetti or pasta is Drained Thoroughly to avoid watering down the white wine sauce.

Step 2 Remove the roots from the enoki mushrooms and wash them thoroughly. Break them into smaller, bite-sized bunches.

🍄 Trimming Pro Tip

You can trim 1 inch Off the Bottom of the enoki mushrooms above the roots directly from the plastic packaging and discard the roots and packaging.

Step 3 In a saucepan, combine butter, minced garlic, white wine, chicken broth, soy sauce, and black pepper. Bring the mixture to a boil and cook for 2 minutes.
