- Heat large stove top pot on high heat and add in ground beef. Sprinkle salt and black pepper, mix in with a spatula and cook until beef is browned, about 2 minutes.
- Add chopped onion, carrots, sliced mushrooms and garlic. Saute for 1-2 minutes on high heat.
- Add in beef broth, bring to a boil, cover, reduce heat to low and cook for 15-20 minutes until vegetables are all softened.
- Once vegetables are softened, add in chopped broccoli and cook for 2-3 minutes or until broccoli are softened to preferred tenderness.
- The final step is to mix in butter, heavy cream and thickener. Continue to mix until your thickener is completely dissolved and soup is thickened. Transfer to a serving bowl and enjoy warm!
