  • Garlic sliced.
  • Broccoli – use only the florets.
  • Salt – sea salt preferred.
  • Black Pepper – ground.
  • Beef Broth – full flavor beef broth.
  • Heavy Cream – heavy cream or heavy whipping cream.  
  • Butter – salted or unsalted butter will both work.
  • Thickener – corn starch slurry or thickener of choice.

If using Corn Starch Slurry as a thickener, prepare a mixture of 2 Tablespoon of Corn Starch and 4 Tablespoons of Water in a mixing bowl. Gradually add this mixture to your soup until it thickens to your liking.

  • 1 lb Ground Beef
  • 1/4 Cup Onions chopped
  • 1 Carrot
  • 1/2 Cup Mushrooms sliced
  • 2 Garlic Cloves
  • 1/2 Cup Broccoli Florets
  • 1/2 tsp Salt
  • 1/2 tsp Black Pepper
  • 2 Cups Beef Broth
  • 1/2 Cup Heavy Cream
  • 1 tbsp Butter

Corn Starch Slurry

  • 2 tbsp Corn Starch for low carb use xanthan gum
  • 4 tbsp Water

Instructions

  • Gather all the ingredients.

  • Chop onion, broccoli, carrot and slice mushrooms, garlic as shown below and set aside.

  • Heat large stove top pot on high heat and add in ground beef. Sprinkle salt and black pepper, mix in with a spatula and cook until beef is browned, about 2 minutes.

  • Add chopped onion, carrots, sliced mushrooms and garlic. Saute for 1-2 minutes on high heat.

  • Add in beef broth, bring to a boil, cover, reduce heat to low and cook for 15-20 minutes until vegetables are all softened.

  • Once vegetables are softened, add in chopped broccoli and cook for 2-3 minutes or until broccoli are softened to preferred tenderness.

  • The final step is to mix in butter, heavy cream and thickener. Continue to mix until your thickener is completely dissolved and soup is thickened. Transfer to a serving bowl and enjoy warm!
