1Carrot

1/2CupHeavy Cream
1tbspButter
Corn Starch Slurry
2tbsp Corn Starchfor low carb use xanthan gum
4tbsp Water
Instructions
Gather all the ingredients.
Chop onion, broccoli, carrot and slice mushrooms, garlic as shown below and set aside.
Heat large stove top pot on high heat and add in ground beef. Sprinkle salt and black pepper, mix in with a spatula and cook until beef is browned, about 2 minutes.
Add chopped onion, carrots, sliced mushrooms and garlic. Saute for 1-2 minutes on high heat.
Add in beef broth, bring to a boil, cover, reduce heat to low and cook for 15-20 minutes until vegetables are all softened.
Once vegetables are softened, add in chopped broccoli and cook for 2-3 minutes or until broccoli are softened to preferred tenderness.
The final step is to mix in butter, heavy cream and thickener. Continue to mix until your thickener is completely dissolved and soup is thickened. Transfer to a serving bowl and enjoy warm!
