  • Chicken – boneless and skinless chicken thigh.
  • Salt – sea salt preferred.
  • Sweetener  use your preferred sweetener. Other options also include, sugar, or honey.
  • Garlic – grated fresh garlic.
  • Soy Sauce – low-sodium Soy Sauce preferred. Can also use tamari for gluten-free.
  • Japanese Sake – typically will come in a large bottle labeled junmai sake. Can also substitute with dry sherry wine or Chinese cooking wine, found at local grocery stores or Asian markets. 
  • Toasted Sesame Oil – 100% Toasted Sesame Oil that should have a dark brown color.  
  • Green Onion – optional garnish, finely chopped green onion scallions.
  • Toasted Sesame Seeds – optional garnish.

You can opt for Chicken Breast as an alternative to chicken thigh, although it will result in a leaner texture.

Step 1 Prepare marinade ingredients by adding salt, sweetener, garlic, soy sauce, Japanese sake, toasted sesame oil in a bowl. Marinate boneless skinless thigh in a glass baking dish, glass bowl or ziplock bag for 4-10 hours.

For optimal marinating results, ensure you have Enough Marinade to generously coat all the chicken pieces, allowing them to be thoroughly flavored. Aim for a marinating time of 8-10 Hours for the Best Flavor infusion. This duration allows the marinade to penetrate the chicken effectively.

Step 2 Transfer the marinated chicken, without washing it, onto a baking tray lined with a silicon baking mat. Bake in the center of the oven at 350°F for 20-25 minutes.

  • 1/4 tsp Salt
  • 2 tbsp Sweetener your preferred sweetener
  • 3 Cloves Garlic
  • 3 tbsp Soy Sauce
  • 1/2 Cup Japanese Sake can substitute with dry sherry wine or Chinese cooking wine
  • 1 tsp Toasted Sesame Oil
  • 1 Stalk Green Onion optional
  • 1/4 tsp Toasted Sesame Seeds optional

  • Gather all the ingredients.

  • Combine salt, sweetener, grated garlic, soy sauce, Japanese sake, toasted sesame oil in a mixing bowl. Add chicken thigh into marinade and marinate for 4-10 hours (best after 8 hours). Note - can also marinate in a ziplock bag.
