3tbspJapanese Sakecan substitute with dry sherry wine or Chinese cooking wine
1tbspWater
1tbspSweeteneryour preferred sweetener
1/2CupBonito Flakescan sub with 1/8 tsp of hondashi

Instructions
Gather all the ingredients.
Finely dice garlic and set aside.
In a stovetop pot, bring soy sauce, Japanese sake, water, sweetener, bonito flakes, and diced garlic to a boil, then simmer for 5 minutes until slightly reduced; strain the sauce, squeezing out excess from bonito flakes. Note - if using hondashi, no need to strain liquid.
In the meantime, cut bacon into 1/2 inch lengths and set aside.
Cut brussels sprout into halves and set aside.
Place a large fry pan on medium heat and add bacon. Cook bacon until preferred liking (about 3 minutes for medium and 6 minutes for extra crispy) and transfer bacon to one holding bowl and the bacon oil into another holding bowl.
Return 1 tablespoon of bacon oil to the hot pan, discard the excess, then cook Brussels sprouts until tender, about 2-3 minutes and finally,mix in bacon and sauce for 15 seconds before transferring to a serving plate.
