Ingredients
2CupsStrawberries chopped
6tbspSweeteneryour preferred sweetener
2tbspWater
1 1/2CupsCold Water
2tbspGelatin 2 x 1/4 oz packets
1/2tspVanilla Extract
Instructions
Gather all the ingredients.
De-stem strawberries and chop loosely.
In a small stove top pot, add strawberries, sweetener, and 2 tbsp of water.
Cook on medium heat until boiling, then turn down to low stirring often. After about 5-7 minutes, lightly crush down the strawberries with a spatula, remove from heat and set aside.
In a new medium stove top pot, mix gelatin with cold water until well incorporated.
Add strawberry sauce and vanilla extract, place on medium-low heat until lightly steaming then remove from heat. Strain mixture in a very fine mesh strainer and pour mixture into dessert dish or molds. Note - Do not boil.
Place in refrigerator for at least 3 hours or until firm. Serve with optional whipping cream.
