Homemade Strawberry Jello

Ingredients

  • 2 Cups Strawberries chopped
  • 6 tbsp Sweetener your preferred sweetener
  • 2 tbsp Water
  • 1 1/2 Cups Cold Water
  • 2 tbsp Gelatin 2 x 1/4 oz packets
  • 1/2 tsp Vanilla Extract

Instructions

  • Gather all the ingredients.

  • De-stem strawberries and chop loosely.

  • In a small stove top pot, add strawberries, sweetener, and 2 tbsp of water.

  • Cook on medium heat until boiling, then turn down to low stirring often. After about 5-7 minutes, lightly crush down the strawberries with a spatula, remove from heat and set aside.

  • In a new medium stove top pot, mix gelatin with cold water until well incorporated. 
    Gelatin being bloomed.
  • Add strawberry sauce and vanilla extract, place on medium-low heat until lightly steaming then remove from heat. Strain mixture in a very fine mesh strainer and pour mixture into dessert dish or molds. Note - Do not boil.

  • Place in refrigerator for at least 3 hours or until firm. Serve with optional whipping cream.
